* For those that don't know, Grower Champagnes are sparkling wines made in the Champagne region of France that are produced by the same estate that owns the vineyard from which the grapes come. While we have love for major brands, such as Moet & Chandon or Veuve Cliquot that produce well over north of 1MM cases annually (hint: they buy grapes from 15,000 producers in the region), we'd rather support the growers who are all about quality over quantity.

** Not Champagne.

The Fattiness of Handcrafted European Sausages dates the High-Browed Acidity of World Class Red Wines

This week we are back folks! Kevin has finally pissed out all the Hurricanes from New Orleans and gained ten pounds from the Po Boys, but the Sausage King still reigns supreme... This week he's pulling two sausages out of his hat...the Austrian "tour de sausage", the Kasekrainer ( pork and beef blended with Swiss Emmentaler cheese), and the other, the Smoky Hungarian, pork with a field of blended Eastern European spices.   These of course coupled with sauerkraut and rotkohl ( red pickled sweet cabbage) and mustards.   Three wines of course complete the date...

Rhone Tasting

Rhone Tasting  $22

This week we travel around the Rhone Valley for a taste of some of the greatest Micro-producers France knows. The first wine is from Domaine Jerome Despresse and is his stunning 2010 Cornas.  100% Syrah from the Northern Rhone Valley.  Receiving a whopping 93pts from Wine Spectator!   The Second wine is from Domaine de la Biscarelle. A 50% Grenache 30% Mourvedre and 20% Syrah blend from Cotes du Rhone.  A "post modernist" wine harvested by hand (though they are not de-stemmed), then fermented and aged exclusively in lined concrete tanks.  A supreme example of fruit purity reflected by terroir.  And the finale wine is from Domaine de Servans in Southern Rhone Valley.  A 72% Grenache 28 % Syrah from vines an average of 40 years in age, totally organic, totally delicious!  Come enjoy the complex expressions of great terroir at Elemental this week!

2009 Chateau Dassault, Grand Cru Classe, Saint-Emilion
One of 64 Grand Cru Classe estate from Bordeaux and it lives up to its hype and price tag. Merlot is main grape here, showing great youth and luxuriant quality that is typical of clay rich soils. How can a wine be so luxuriously silky and elegant?

2009 Chateau Durfort-Vivens, Second Growth, Margaux
The soil in Margaux is among the lightest and most gravelly in the Medoc, Bordeaux, giving this wine soaring elegance and refinement plus wonderfully generous aromas. Margaux wines are often described as being like an iron fist in a velvet glove. This wine will surely make you fall in love.

Caviar & Sparkling Wine!

  • Elemental Studio

Also known as Black Gold, historically, caviar has been a true delicacy for many ultra-rich and highly privileged folks all over the world. Well, none of us are Russian Czars, Roman Emperor or English Kings so we won't be serving the ultra-premium and most expensive Beluga or Osetra caviar this week. But we will have very budget-friendly Black Capelin from Iceland served with Jean-Louis Denois Brut Classique sparkling wine. Now that sounds exciting doesn't it? And if you missed it last week, we are bringing back Baltimore-style crabcakes once more.

Open Wed-Fri, 7pm to late.

Baltimore-Style Crab Cakes!

  • Elemental Studio

Did you know chefs typically ruin a good crab cake by adding too many crap and fillers? There is, in fact, a right and a wrong way to cook some foods, and putting a lot of junk in a crab cake is one of the biggest transgressions that you can find in American cookery. That said, this might be the best crab cake recipe you will ever find...just so good. Want some? We'll be open just two days. Join us.

Invitation to Ginger Garlic Chicken Delight

  • Elemental Studio

(We're open Monday through Wednesday this week).

Okay I admit, when Kevin cooked up this chicken dish, I didn't expect too much. After all, it was just...chicken. But when I took a bite into this chicken, I was blown away. Literally. It was so tender, juicy and full of flavors that crusty ginger and garlic intensified the whole thing without much so, I said, "Let's showcase this dish!" even though we'd had other plans with menu. Anyway, I think you'll love this dish as much as I did. So if you're down with what we're bringing to the table, let's get you to RSVP below.

Two chile ginger garlic chicken  $8

5 wines by the glass to choose, priced separately at $8-16 range (no flight this week) plus whole line-up of Ports.

 * Now is the gifting season of year. And you may already know wine makes great gift, especially our boutique wines not found in local supermarket. So don't be shy...come by and pick out wines to take home as gifts. And if you'd like, we can guide you along the way. He can help you find the right wines.

Japanese Ginger Fried Chicken + Wine Flight

  • Elemental Studio

Who can get excited over this one? But first, I'd like to say sorry to some of our guests who'd like to see vegetarian options. We haven't forgotten about you.

Yes, back to Karaage, which is Jananese name for fried chicken, was something foreign to me until Kevin mentioned it. I'm glad he did because as much as you do, I love fried chicken (sans skin) but it's not just another fried chicken my friends. It's Japanese style, sort of like deep fried tempura. The biggest difference is the batter - potato starch vs. corn starch. Here, potato starch is crispier and gives you nice crisp texture when bite into it. As the nights are getting colder in Los Angeles these days, this is the week where I'm going to be excited to get it on...

The Wine Flight:

  • Denois Brut Classique Sparkling, France
  • Domaine St. Mitre Rose,France
  • Domaine Aime Cabernet Franc, France

The wine flight is $12. Other wines are available too.

The food + wine flight is $19.

Wed-Fri, 7-11pm.

Pork Belly BLT with Cherry Tomatoes + Wine Pairing

  • Elemental Studio

Crackly skin. Buttery fat. Juicy meat. No wonder pork belly has gained massive popularity in the last few years. Since so many chefs find excuses to work pork belly into appetizers, entrees or even desserts, we decided to take a classic BLT and put a spin of ours. The result is...Pork belly BLT with cherry tomatoes. You're going to believe why pork belly is the new bacon.

The Food - $7

Pork belly BLT with cherry tomatoes

The Wine flight - $12

  • Quinta Do Correio white blend, Dao, Portugal
  • Sendero Royal Tempranillo, Rioja, Spain
  • Roche Audra Visan, Grenache/Syrah, Cotes Du Rhone, France

Brix Chocolate + Wine Pairing

  • Elemental Studio

We're open Friday, this week only. Happy Halloween!

If you're like me, you'll surely be stoked about this week's wine tasting. Why, we've got chocolate! Not just any generic chocolate from supermarket but we've got Brix Chocolate, which is a premium lineup of chocolates specially formulated to complement wines. You may be saying, come on Travis, wine and chocolate just don't go together. Look, I've always thought the same but when I tasted these Brix chocolates, boy I was hooked!

What you'll taste:

1. Brix medium dark chocolate paired with Mountford Village Pinot Noir, New Zealand. Cacao enhances soft, fruity and earthy nuances of the wine. Wow.
2. Brix extra dark chocolate paired with Roche-Audran Cotes Du Rhone. Deep, dense wine with a grippy tannin finds extra cacao ever so complementary.
3. Brix smooth dark chocolate paired with Kopke ruby port, Portugal. Milky and sweet chocolate goes so well with sweet, dense port. What a way to finish off.

The donation:

  • $19 for three-wine flight with three Brix chocolate pairing.
  • $12 for three-wine flight only.
  • Wine by the glasses available
  • Vodka soda
  • Beers by the bottle

Street parking free after 8pm. John Aiso Parking is only $3 all evening, located between Temple and 1st street on Judge John Aiso St.

Meatball Nirvana!

  • Elemental Studio

Meatballs...there's nothing really fancy about it. But perhaps that's the point. As much as they are one of the most unassuming, non-sexy food that one may think of, when meatballs are done right, they pack so much flavors. And you can assume that's the reason why we all love meatballs.

So for this week, we're cooking up juicy meatballs. Made from scratch. Inspired and taught by our friends who are chefs...that will be made only with top-quality ingredients. And made with love.

What we're serving:

  • One serving of home-made meatball made with grass-fed beef, herbs and spice topped with tomato basil sauce. Served with a toasted baguette on the side - $7
  • Three red wine-flight pairing -$12
  1. Mountford Village Pinot Noir, New Zealand
  2. Ch. Pech-Celyran La Clape, France
  3. Almodi Petit Red, Spain

Plus more selection of wines by the glass, craft beers and vodka soda you can choose from. As for dessert wine, we've got 1991 Kolheita port. Man, that's 22 years old...almost as old as some of you. Can you imagine just how mind-blowing it would be!

If you're driving, John Aiso Parking Garage is just $3 all night (closes at midnight so no overnight parking), located between Temple and 1st on Judge John Aiso St. Here's map and info.

As you may know, space is limited to 15 peeps each day. Go ahead RSVP below to reserve your spot for this week's experience.
